The High Protein Dinner I Make When I Don’t Feel Like Cooking

When my nervous system feels overwhelmed by the end of the day, the last thing I want to do is spend an hour cooking dinner or figuring out another “perfect” healthy recipe online.

That’s why this high protein sourdough pizza toast has been one of my favorite easy dinners lately. It’s perfect to eat on its own or paired with a simple salad for extra greens.

It takes less than 20 minutes, feels comforting, and has enough protein and healthy fats to actually leave me feeling full and satisfied without wanting to snack later.

What I love about this meal:
• cottage cheese adds extra protein
• sourdough is easier for some people to digest than traditional bread especially if you are gluteen free
• protein + healthy fats help keep this meal more balanced and filling
• it feels comforting while still being simple and nourishing
• easy to customize depending on what you have at home

High Protein Sourdough Pizza Toast

Ingredients

• 1 slice sourdough bread
• 1/3 cup tomato sauce
• 1/2 cup cottage cheese
• 1/2 cup shredded cheese
• fresh basil 

(optional adds)
• cooked bacon
• minced garlic
• red pepper flakes

Instructions

  1. Layer sourdough bread with tomato sauce- Add garlic at this step if using.
  2. Spread cottage cheese over the sauce and top with shredded cheese.
  3. Air fry at 200 degrees for 8–10 minutes until crispy and melted.
  4. Top with cooked bacon and fresh basil & red pepper flakes if using
  5. Slice into 4 pieces and enjoy.

Serving Suggestions

• pair with a simple salad for extra greens
• drizzle with hot honey for a sweet + spicy combo
• add sausage or pepperoni for even more protein
• serve with fruit for an easy balanced meal
• top with arugula after air frying for extra freshness
